SPINACH WITH MUSHROOMS

  • 1 lb. fresh spinach

  • 4 t. oil

  • 1 onion, chopped

  • 1/2 lb. fresh button mushrooms, sliced

  • 4 t. lemon juice

  • 1 t. salt

  • 1/4 t. nutmeg

  • 1/4 t. pepper

    Makes 4 servings

    Remove stems from spinach and wash several times; drain. Heat oil in a large saucepan. Sauté onion three minutes. Add mushrooms; cook another three minutes.

    Stir in spinach, lemon juice, salt, nutmeg, and pepper. Cover tightly; cook over medium heat three minutes.
